For approximate water content of dried fruits. This measures in Brix and displays (100-Brix)% for approximate water content. Halve a piece of dried fruit and press the prism on the cut side.
Most dried fruits contain just 15 to 20% water content, depending on the variety.

The moisture content of home-dried fruit should be about 20 percent. When the fruit is taken from the dehydrator, the remaining moisture may not be distributed equally among the pieces because of their size or their location in the dehydrator.
